I am working with a IMU and am not sure yet how to use the data to compute what I need. I think it would be best for me to store the data on excel, figure out what formulas to apply on it and then once the model is built on excel, put it back to Arduino.
1- How do I save the data on excel?
2- Is what I am doing worth it? Should I directly do it on Arduino?
EDIT: Forgot to mention that the IMU will be plugged directly into the computer therefore nothing will be stored on SD, it is a live feed in the serial monitor of Arduino in a loop. I just want to know how to take the data form lets say the first 10 seconds that are generated from that serial monitor and them in a CSV. Is there a function?

Is it possible to save on different excel sheets after a number of data collected?I am data logging using Arduino in real time and I am aiming to create a new sheet every day. Or at least is it possible to change the name of the .csv?

Why not just create a function that formats the data as CSV on the Arduino side and then prints it out on the serial monitor. You can then copy the output on the serial monitor and paste it into a .csv file. You could also write a small program that takes the output on the serial monitor and then saves it to a .csv file. Here is an example of the code on the Arduino side
